
Serves:16 rolls
210 g of strong flour
210 g of all purpose flour
1 egg
1 egg yolk
180 g of fresh milk
1 ts of honey
60 g of butter
75 g of sugar
5 g of salt
11 g of fresh yeast
for the filling:
4 tbs of light brown sugar
2 tsp of cinnamon
35 g of melted butter cold
for the frosting:
icing sugar
water
In a small bowl dissolve the yeast in warm milk with honey. Stir and wait until starts to foam on the surface. Pour yeast mixture in a bowl of a mixer and add much flour as needed to form a firm mixture(use flat beater of the mixer). Add the yolk and half sugar. Mix the ingredients well and add more flour. Add the whole egg and the other half of the sugar. Continue to add all the flour less a spoon, always mixing with the flat beater.
Add salt and give a first stringing increasing the speed of the mixer. Insert gradually softened butter. Finish with the last spoon of flour and string well. Place the dough in a bowl, cover with plastic wrap and let rise until doubled in size(almost 4 hours).
Place the dough on a lightly floured work surface and make the folds shown here in the first, second and third photo.
Turn the rectangle obtained, cover with plastic wrap and wait about 30 minutes.
Meanwhile, for the filling, melt the butter and let it cool. Add the sugar and the cinnamon.
With a rolling pin roll out the dough into a rectangle. Brush the surface with melted butter and roll the rectangle to form a long sausage.
Cut the rolls and place in a baking pan covered with parchment paper. Cover with plastic wrap and let rise for about an hour.
Preheat oven to 180 ° and bake for 12-15 minutes or until golden brown on the surface. Remove from oven and allow to cool. Mix powdered sugar and water until smooth and pour on the cinnamon rolls.
